Have you ever had fried sweet plantains before? They are sooooooo good. I like to eat them in a egg sandwich. Sounds weird, but trust me, the plantains just takes it to a whole other level! The riper the plantains, the better in my opinion. Frying plantains can pose a risk sometimes because of the hot oil you’re subjected too, not to mention the mess with the hot oil splashing out the pan. I mean if you are used to doing it, then you don’t really notice; it just comes with the territory. If you have ever fried plantains, then you know exactly what I am talking about.
Well I found a better way to get my plantain fix without having to stand in front of a frying pan getting potential 3rd degree burns. Put them suckers in the oven! Like duh, so simple. In reality it’s just roasting the plantains. I don’t even know why I never thought of it before. Plus you can make more at one time vs. frying multiple batches on the stove. ne time vs. frying multiple batches on the stove.
Here is what you will need to do:
Line a baking sheet with parchment paper.
Cut the plantains on the diagonal and arrange on the parchment lined baking sheet.
Brush with olive oil.
Bake in the oven for about 25 min @ 390 degrees or until nice and browned.
